The wines of Domaine de Larzac are situated mainly in the Peyne river valley that originates in the Black Mountain before joining Revel (Haute-Garonne) and Clermont l’Hérault (Hérault) and flowing into the Hérault river. The estate is located in the villages of Roujan and Caux.
The geological map of the Hérault drawn up in 1894 by Mr. Paul Gervais de Rouville, Dean of the Faculty of Sciences of Montpellier, classifies the terrain as molasses dating from the Miocene period. It features clay-limestone soil. The right river bank has clay soils favorable to IGP Pays d’Oc grapes such as Sauvignon, Chardonnay, Muscat Petits Grains, Cabernet Sauvignon….
Merlot is planted near the river on the lightest and most humid terroir. The AOP Languedoc varietals (Syrah, Grenache and Mourvèdre) and Roussanne are situated on the left bank on a lower terrace. The AOP Pézenas terroir is above on a higher terrace with more stony soil.
The motto of the Domaine de Larzac is written on one of its walls: “Sine sole nihil”: Nothing without sun.
This estate has a mixture of country, IGP Pays d’Oc and AOP Languedoc wines including AOP Languedoc Pézenas. Three product ranges are divided according to the terroir:
- the plain dedicated to country wines (Vins de Pays): Roussanne, Chardonnay, Sauvignon, Grenache, Syrah, Marselan
- the first level of stony terraces featuring Syrah, Grenache and Mourvèdre for the AOP wines
- a second hillside for the AOP Pézenas.
